We have a lot of rhubarb. Len and the rhubarb do not get along, yet despite the many ways Len has tried to end its life, the rhubarb is still winning the battle.
The time has come to embrace the rhubarb and accept that it is here to stay. Len has finally succumbed to my delicious baking temptations and tonight, he agreed to taste my Rhubarb Strawberry Crumble.
It was a victorious moment in our marriage.
This is a recipe I altered to fit our diet of no refined sugar, pesticides or processed food. It’s delicious and still very sweet. Next time I make it I might cut back the honey a little more. Tineke’s healthy Rhubarb Strawberry Crumble
3/4 cup unpasteurized honey
3 tablespoons whole wheat flour (we get ours from the farmer’s market)
3 cups sliced organic strawberries
3 cups diced organic rhubarb
1 1/2 cups whole wheat flour
3/4 cup organic coconut sugar
1 cup organic butter
1 cup rolled oats
(p.s. yes this is the most expensive crumble you’ll have ever made.)
Preheat oven to 375 degrees F
Mix together rhubarb, strawberries and honey.
Sprinkle in 3 tablespoons of flour while mixing. Pour into 9x13 inch baking dish.
In a separate bowl mix remaining flour, coconut sugar and oats. Cut in butter until crumbly.
Pour on top of rhubarb mixture.
Bake for 45 minutes.
Here’s the best news: Len actually liked it! (or at least he pretended well… which could work against him now that I plan to make it more often!) The whole family sat around the table savouring every bite with lips smacking and a chorus of ‘mom, you are amazing! this is delicious!’ - yes, it has been awhile since I baked.
But I AM also amazing. haha
Thought for the Day
Sometimes in life we have to accept the inevitable. In this case, the rhubarb isn’t going anywhere so we might as well eat it, enjoy it and allow it to nourish our bodies. Once Len let go of his vengeance against it, he realized it actually has a purpose beyond driving him crazy. Maybe… just maybe… this year he will go around my rhubarb plants when he mows the lawn! Here’s hoping…!
